Planting this Riesling grape variety was a challenge taken up by the former owner of the Azienda in 2014 and in 2017 we made its first vinification in amphora. Our white wine is vinified “on the skins” for several months without oxidisation.
In spring the wine is pressed and left in amphora until June before being bottled. The wine being unfiltered allows us to keep its original colour.
Total sulphite count at bottling: between 20 and 30mg per liter.
